
JAPANESE HOTCAKES
2 large eggs
3/4 cup buttermilk
1/4 cup sugar
1/2 tsp vanilla extract
1/4 tsp salt
1 1/2 cups flour
1 tsp baking powder
1/4 tsp bicarb
Beat the eggs, buttermilk, sugar, vanilla and salt together
Add the rest of the ingredients and blend well
Heat a skillet over a medium flame and grease lightly with butter
Butter the inside of a ring mould and put it on the skillet
Fill the ring halfway up with the batter
Cook until bubbles appear
Flip it over using a spatula
This is tricky as some of the uncooked batter may spill out so a good idea would be to have another skillet the same size on standby and invert it over the rings and turn them all over together
To serve: Place a generous knob of butter on the top and drizzle with honey
Best eaten warm
