
This recipe reminds us of our many happy hours sitting on the back of a Land Rover in the Bushveld. Whenever we returned from a game drive – spotting birds mainly – these would be waiting for us accompanied by iced coffee.
Pecan Crescent Cookies
Ingredients
2 cups sifted flour
1 cup butter – cut into cubes
1 cup pecans – finely chopped
½ cup icing sugar – sifted
½ tsp salt
1 tsp vanilla essence
¼ tsp almond essence
Instructions
Combine the flour, butter, pecans, icing sugar, salt, vanilla essence and almond essence
- Mix well with your hands
- Wrap the dough and refrigerate for at least 2 hours
- Form the dough into 1” balls then roll each ball into a 2” roll (The ends should be narrow and middle flattened) Form into curved shapes
- Set 1” apart on baking sheet
- Bake at 180°C for 12-15 mins until cooked but not brown
- Cool and apply a thick dusting of icing sugar
