Pecan Crescent Cookies

This recipe reminds us of our many happy hours sitting on the back of a Land Rover in the Bushveld. Whenever we returned from a game drive – spotting birds mainly – these would be waiting for us accompanied by iced coffee.

Pecan Crescent Cookies

Ingredients

2 cups sifted flour

1 cup butter – cut into cubes

1 cup pecans – finely chopped

½ cup icing sugar – sifted

½ tsp salt

1 tsp vanilla essence

¼ tsp almond essence

Instructions

  • About_the_Kitchen_Pecan_CrescentsCombine the flour, butter, pecans, icing sugar, salt, vanilla essence and almond essence
  • Mix well with your hands
  • Wrap the dough and refrigerate for at least 2 hours
  • Form the dough into 1” balls then roll each ball into a 2” roll (The ends should be narrow and middle flattened) Form into curved shapes
  • Set 1” apart on baking sheet
  • Bake at 180°C for 12-15 mins until cooked but not brown
  • Cool and apply a thick dusting of icing sugar
